Jack-O-Lantern Quesadillas


Sara: I was scrolling through Twitter, like you do, and came across someone who tweeted Jack-o-lantern quesadillas and of course I had to make some, because spoopy! Upon Googling, I discovered that quite a lot of people have done this, so I kinda just winged it. In an attempt to be healthier, Jeremy is working on eating less meat, and I am always down for veggies so we made ours vegetarian style, but it’s pretty easy to substitute whatever.

We used: 1 can of black beans, half a white onion, 1 bell pepper, Mexican blend cheese, half a packet of taco seasonings, and tortillas. Preheat oven to 450 degrees. Rinse beans, and chop veggies. Heat a little oil in a pan, and cook onions and beans, add peppers and seasonings. When finished, remove from heat, and line baking sheet with tinfoil (some people like to oil the tortillas, but I skipped it). Next, layer some cheese and fillings on one tortilla. Next, cut our eyes and mouth with a knife on a second tortilla, and then place it on top of the fillings and cheese. Bake for 15 minutes or until tortilla starts to brown.

We ate ours with salsa, because we are salsa freaks, and also salsa is amazing. If you have kids, this is probably a cool thing to do at Halloween. If you are an adult, obsessed with spooky shit and will find any excuse to do something even remotely Halloween related, this is a cool thing to do always.
